Irish Coffee Muffins

Celebrate St. Patrick’s Day with this tasty treat!

1 cup strongly brewed Café Campesino Coffee
2 1/2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
2 eggs
1 cup sour cream
4 tablespoons Irish whiskey

Mix together all dry ingredients. In a separate bowl, whisk eggs and sour cream and add coffee and whiskey. Make a well in the dry ingredients and stir in liquids quickly. Spoon into 18 muffin cups and bake at 400 degrees for 20 to25 minutes or until tested done.
